I stayed here several yrs ago and it was really nice  http://www.towncreekcottages.com/  , a river runs right thru property with some nice trout and they have a stocked pond.  Fireplaces, jaccuzi.......very nice.  I am not sure about any riding trails in that area though.  It is right outside the town of Blairsville Georgia.
