Im with rico.

Here is the reason you feel your body flying away from your bike.

#1
 You are coming up to the jump with some speed, then before you get to the top, you are letting off.

Whats happening?

 Well, as you and the bike are accelerating, you both have momentum and mass.

When you let off the throttle, your bike has more mass and less momentum, compared to your body that has less mass, and same momentum as the quad before you let off, still traveling the same speed and trying to pull the quad along with you.
