I thought this would be a good idea to share our favorites recipes? Wink

I'll Start.

Low-fat Steak Gorgonzola (or Chicken)

Sauce:
2-packages of Knorr Alfredo Sauce mix or Four Cheese mix (Knorr is the BEST)
1-4 oz tub of Gorgonzola Cheese
3 cups of Skim Milk
2 tbls margarine

Prepare sauce as directed on package, using skim milk, add Gorgonzola Cheese and simmer on low.
pour over your favorite pasta, add Sauted Mushrooms in wine (optional)
Grilled NY Strips or Chicken
Add a salad

Enjoy  Wink It's EASY and GOOD!

It's kinda like a routine you have certain things that get cooked on certain days b/c they are easier..It's a pain but good recipes are always needed especially with kids who don't like eating the same thing every week! Roll Eyes

I know lots of quick meal/snack type recipies... it's all about being creative. This on works great with kids and adults (no matter what diet your on).

Everyone loves pizza right? Ordering pizza every week can get expensive, not to mention all the carbs (if your on a low carb diet). When I get a killer pizza craving I make me own, quick and simple.

1 pita pocket (these come in any kind, from onion to low-carb)
Sauce (I used home made sauce, we make a huge pot of it and freeze it... tastes much better then store bought)
Any topping
Non-stick cookie sheet

Just take a pita and cut it in half so that you have 2 round, flat pieces. Put on sauce, cheese, and whatever other toppings you like. Place in oven for about 10 minutes on 350ish (or until cheese starts to brown).

See, I told you it was simple Smiley And if you have kids, they wont mind helping!

I have lots of low-salt recipes,

Jeff and I did the Michael Thurmond's 6 week body make over, and the food is all natural  Shocked NO Preservatives, NO salt, yeast, sugar, or dairy  Angry
Very tuff!  We stuck to it about 80% for about 2 years.  When the hurricanes hit I threw it out.  We are trying to get back into it somewhat.  Anyway I learned a lot from it and we still do not own a salt shaker  Grin  I learned to cook with peppers and spices to make up for the salt.
I was very HARD to give up my Country salt packed Ham  Shocked I'm from Virginia and I think it is part of my blood  [smiley=laugh.gif]
It's tuff giving all that up and Cigs TOO!  [smiley=Pinch.gif]

So if we get invited to dinner at your house can I bring my own shaker? I can not imagine not having salt in my diet. I don't cook with it but it is mandatory for the table. We bought some sea salt but I found I use more so I quit using it and went back to Mortons salt. YUP  Grin  Some things I buy now are so salty I can't eat it Sad  and when I drive by a Chichen Fast Food joint the smell makes me sick or any Fast food place, But I love fried chicken as long as I make it  Grin
For recipes that require salt I will use a salt subitute or Morton Lite depends if it's for us or others.
We all get plenty of sodium without putting it on ourselves.  I use to think soup and salad was a light healthy dinner untill I started reading labels  Shocked  

Stay far away from soup and rice Betsy  Wink

k very important!!!! the ones you get a the cuban restaurant are not very good looking plantains..Meaning
When you go to get them either publix/winn dixie you have to get the ones that look like they are rotten(black looking very soft)
1-Cut plantains sideways to make the shape
2-Heat up oil till it reaches 325°
Put plantains in the oil to fry and flip occasionally for 3min till golden brown
that's it the secret is find the ugliest looking plantains in the store  Wink

My best friend's mother (old time Cuba) always told me to smash said bannas between two brown paper bags after frying.  Not sure why this was necessary, but it sure does release aggression.

A friend of mine makes them, not home now.  But I have seen packs at publix in the produce area to make Cajin Boiled Peanuts.  Wink

I found out, my friend uses "Hawks" frozen Cajin Peanuts.  She said if you buy the raw peanuts and the seasoning pack it takes forever.  Sad

About the plantains, a friends mom showed me how to make them.
She cut them in 2" increments then deep fried them till they were soft enough to mash.  Mashed them between two small plates then deep fried them again till crunchy.  Add seasoning.  I like salt or garlic salt.

they were NASTY ! I think I fred them to fast yuk !

there are two types of plantains. yellow and greens. you uses the greens to make the one you are talking about. The yellow ones are sweeter ones like Nena..

I made homemade Beef Jerky this week  [smiley=ThumbsUp.gif]
Oh My.... It's awesome, have to hide it from the hubby so we will have some for the weekend!

I bought a Dehydrater from Outdoor World and the cure/seasoning mix.  I used London Broil for the Teriyaki Sticks and made Round Roast Cubes with regular seasoning.

This is awesome!  Need to go to Costco and get a Whole Tenderloin and do a batch.
Anyone at RR this weekend will have to taste......... Grin

P.S. If you have the Seasoning/cure you can make this in the oven
